Party Time!! {Cinco de Mayo}



Those are words exclaimed by my 2 year old yesterday when she came home to "fluffy" decorations hanging from the ceiling, a blanket on the dining room table, and of course ... cupcakes.  Cupcakes to her are synonymous with birthdays but trying to explain to her that we were celebrating Cinco de Mayo was way beyond her comprehension. 

  
Anywho, at the last minute I decided to throw a petite party for the three of us.  The menu consisting of chips and salsa, Rachael Ray's chicken enchiladas (best ever), yellow Spanish rice, Borracho beans, and these lovely Tres Leches cupcakes.  I saw this recipe on Pinterest last week and my sweet tooth had to indulge!  And let me say it was definitely worth it.  


Spanish for three milks, tres leches cake originates from Mexico and is soaked in three different kinds of milk, evaporated milk, condensed milk, and heavy cream.  Since this party was last minute, I didn't get a chance to take pictures of the cupcake baking process but you can find the original recipe here.  I followed the non-alcoholic recipe and instead of making homemade buttercream icing I used ready made cream cheese frosting ... go ahead, judge me.  And one word of wisdom, the more holes you poke in the cake, the more spongy your cake will be.  So when you feel like you've poked enough holes, poke some more.
